Slummin' It: Seaweed, Kimchi and Tofu Noodle Soup



This is one way to make quick and healthy (as healthy as can be) instant noodles. There is a vast difference in taste, quality and junk content in "Mr. Noodles" type noodles. The ones I like best are called "Mamee: Instant Noodles" - Vegetable Flavour. They cost 40 cents and taste less salty than others. There is a nice peppery zing in the broth.

Ingredients

1 package Mamee Oriental Noodles: Vegetable flavour
About 15-20 cubes of extra firm tofu
2 layers of "dried seaweed layers" (the stuff they use for sushi rolls)
A big spoon of Kimchi (a hidden gem super food)
A chopped green onion

Instructions

Cook the noodles. Add the fun stuff. Eat. Move on with life.
